Baking paper is also called silicone paper. People often use it in daily baking and cooking. Some people also call it parchment paper.
Good baking paper is made of virgin wood pulp and is usually coated with silicone oil. There are two types: double-sided silicone oil and single-sided silicone oil.
Baking paper is resistant to high temperatures (generally 200-230℃) and can be directly used in ovens and air fryers. It has anti-stick and anti-oil functions and is often used for baking biscuits, cake demoulding, and baking tray pads.
Baking paper coated with silicone oil on both sides has a better anti-stick effect. It is suitable for wrapping food (such as butter, dough) or stacking meat patties to avoid adhesion and is not easy to seep oil. It is suitable for cooking meat with high fat content or food that requires a lot of oil when cooking.
Single-sided silicone oil paper has silicone oil on only one side, and the other side is base paper or rough surface. The advantage is that the rough surface can fit the baking tray to prevent sliding; it also saves costs and is cheaper than double-sided silicone oil baking paper. It is suitable for conventional baking, such as laying baking trays, baking bread and other single-sided anti-sticking needs.
Greaseproof paper, through overpressure process or chemical treatment (such as sulfate soaking) to make the paper dense, without silicone oil coating, its oil resistance can block grease penetration, suitable for packaging fried chicken, hamburgers, sandwiches and other greasy foods, but not resistant to high temperature (usually <180℃), long-term high temperature is easy to brittle or burn, so it is not suitable for oven baking.
The advantage is that greaseproof paper has no coating, so the cost is lower, and it is usually degradable and more environmentally friendly.
